Quinoa and Chickpea Salad

Ingredients:

1 cup quinoa
2 cups water
1 can chickpeas, drained and rinsed
1 red bell pepper, chopped
1 small red onion, chopped
1 cucumber, chopped
1/2 cup chopped fresh parsley
1/4 cup chopped fresh mint
1/4 cup extra-virgin olive oil
2 tablespoons lemon juice
Salt and pepper, to taste

Instructions:

Rinse quinoa in a fine mesh strainer and transfer it to a medium pot. Add water and bring to a boil over high heat.

Reduce heat to medium-low, cover, and simmer until quinoa is tender and water is absorbed, about 15-20 minutes. Remove from heat and let sit for 5 minutes.

Fluff quinoa with a fork and transfer to a large bowl.

Add chickpeas, red bell pepper, red onion, cucumber, parsley, and mint to the bowl with quinoa.

In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour dressing over the salad and toss to combine.

Serve immediately or chill in the refrigerator for up to 4 hours.
